Onde onde

1 cawan tepung pulut
2 sudu besar tepung gandum
1/2 cawan air pandan

Campurkan semua bahan, gentel sampai doh tak melekat di jari.

Letakkan gula melaka di tengah2.

Rebus dalam periuk sehingga buah melaka timbul.

Angkat dan golekkan dengan kelapa yang dicampur sedikit garam.

Adunan ini menghasilkan 10 biji onde2.

Kuih ketayap


1 cawan tepung gandum
1/2 cawan santan pekat
1 biji telur
1 sudu minyak masak
1 mangkuk air daun pandan
Garam secukup rasa

Kacaukan semua bahan hingga sebati.
Adunan kena cair supaya dapat dadar yang nipis dan dan mudah digulung.

Adunan ini menghasilkan 8 gulung kuih ketayap.

Nasi Ayam Paling Sedap

Lauk Ayam:
1 ekor ayam
2 inci halia
4 ulas bawang putih
5-6 ulas bawang merah

Bahan perap:
1 sudu besar sos tiram
1-2 sudu besar kicap cair
1 sudu besar kicap manis
1-2 sudu besar madu
1 sudu besar minyak bijan

Kisar halia dan bawang putih dan bawang merah. Perap ayam dengan bahan kisar selama 30 minit. Ini cuma anggaran. Kalau belum cukup kerana saiz ayam besar, boleh tambah.

Didihkan air di dalam periuk dan masukkan ayam tadi dan perlahankan api sehingga ayam setengah masak. Selepas itu angkat ayam tadi dan perapkan dengan bahan perap seketika. Lumur rata dan gantungkan ayam sekurang kurangnya satu jam.

Goreng ayam secara deep fry atau di dalam periuk yang dalam sehingga minyak menenggelami ayam. Untuk lebih mudah, sangkutkan ayam dengan besi penyangkut ditepi periuk agar mudah mengangkatnya setelah masak. 

Setelah ayam masak angkat dan gantung untuk toskan minyak. Potong ayam dan hidang.

Nasi Ayam Paling Sedap Azie Kitchen


Nota:
Ayam jangan dipotong, biarkan seekor. Setelah digoreng atau dipanggang barulah dipotong agar ayam masak cantik. Tapi kalau susah untuk menggoreng, bolehlah dipotong 2 atau potong 4 sahaja. 

Saya potong 2 sebab nak menjimatkan minyak semasa menggoreng. Saya lebih suka goreng dari dipanggang. Jadi saya tidak gantung, sejatkan di atas jaringan sehingga betul betul kering airnya.


Nasi Ayam:
2 sudu besar mentega - tak guna
Ketulan lemak ayam - panaskan dan ambil minyak ayam - saya tambah
5 ulas bawang merah - tumbuk
3 ulas bawang putih - tumbuk
2 inci halia - tumbuk
2 helai daun pandan
1 helai daun salam (bay leave)
1/4 cawan susu full cream
1/2 - 1 kiub serbuk pati ayam
1 sudu kecil garam
Secubit gula
Rempah penumis - 3 bunga lawang, 4 buah pelaga, 2 kulit kayu manis

Basuh beras wangi, tos dan masukkan ke dalam rice cooker. 

Di dalam kuali masukkan mentega (saya guna minyak ayam), tumis bawang putih, bawang merah dan halia yang telah ditumbuk, bunga lawang, buah pelaga, kayu manis, daun pandan dan daun salam. 


Setelah naik bau masukkan separuh daripada air rebusan ayam tadi, susu full cream, garam, serbuk pati ayam dan secubit gula. 


Biarkan mendidih dan tutup api. Tuang ke dalam beras tadi jika air tidak cukup tambah air biasa dan masak seperti biasa. Sukatan air ikut sukatan untuk jenis beras masing masing.

Setelah nasi masak, tabur bawang goreng dan daun bawang atau daun sup dan hidang.


Sambal Cili
5 tangkai cili padi merah siam - saya guna cili merah
5 ulas bawang putih
2 inci halia - saya tambah
1 sudu kecil cuka
1 sudu kecil garam atau secukup rasa 
1 sudu kecil gula atau secukup rasa
1/2 cawan air rebusan ayam - saya tambah
Sos tomota - opsyenal saya tambah

Blend cili padi merah siam dengan halia dan bawang putih. Masak di dalam kuali. Masukkan gula, garam dan cuka secukup rasa. Tambah sedikit air rebusan ayam. Masak dengan api kecil sehingga likat.  


Sambal Kicap
Air kicap lebihan perapan ayam tadi dimasak di dalam kuali sehingga mendidih.  Sesuaikan rasa garam dan gula. Angkat.


Kuah Sup
Jeruk kubis
Garam
Serbuk pati ayam
Daun bawang - tabur
Bawang putih goreng - tabur

Separuh air rebusan ayam dimasak semula dan campurkan jeruk kobis, garam dan serbuk pati ayam.

Tabur potongan daun bawang dan bawang putih goreng ketika menghidang.

Tompok

Pok - 3 months
Tompok has been an addition to our family since November 2010. He was 2 months old then. A friend gave him and his mother to us. Tompok is a domestic type, though his mother, Mek, is a Siamese. Must be his father is a dominant domestic. Tompok, or Pok, or Empok as he is fondly called by us has been very active since kitten. Very playful and joyful. When he first came with Mek, he immediately felt like home. While Mek roamed the house up and down, he would playfully catch Mek’s tail; bite Mek’s feet or just ambushed Mek from back. He has nothing to worry, as Mek is around to play with him.



Pok : I'll catch you one day Fish!

I was very hesitated at first, on the idea to allow a pet in the house. I’ve had 4 cats before during my childhood and I had felt the sadness and sorrow when losing them one after another. Till the last, I’ve made a pledge that I will NEVER ever going to have a pet again, as the pain of losing is so excruciating. But, for the sake of my daughter, I have broken the pledge to give her a chance to share her love with a pet.



4 days after Pok and Mek arrived; Mek went out and never came back. Pok, being a very joyful cat, can take the lost easily. He plays with us, bites our fingers, catches our leg, ambushed us when we walked and played hide and seek with us. He listens too. When we talked to him, he will look at us and ‘miow’ as if saying ‘ok, yes, mama, kakak, pakcik’.

There’s one time when we came back from elsewhere and parked our car opposite the house. Pok came from nowhere and ‘buat lembek’ (the act of lying down for us to touch his stomach) in the middle of the road!

Pok sleeps like a baby...


Now, Pok is 7 months and has reached adulthood but his characteristics remains, a joyful and playful pet. Thanks Pok for sharing your love with us!
